Sauerkraut

I have never eaten sauerkraut. I remember my Dad eating it when I was a kid; it was stinky and yucky looking. Nope - not for me. If that's you, too, you owe it to yourself to try this recipe. It is the most delicious thing you will ever eat made from a head of cabbage. I promise! It does not stink; it's salty and fresh and - oh, there's no way to describe it. Just try it - you will be hooked as well as healthy. I even put 1 tablespoon full of it in my dogs' food once per day. Homemade sauerkraut has 13 different strains of beneficial bacteria - it is the powerhouse of cultured foods.

Homemade sauerkraut



1 small head of organic cabbage
1 carrot
1 tsp dill seed
1 T caraway seed
1 T salt

Cut cabbage in quarters and grate in food processor, or slice thinly. Place in large bowl. Grate carrot and add to cabbage.

Add dill seed, caraway seed, and salt. Mix thoroughly with hands.

Chipotle Peach Salsa

I love salsa. Salsa and corn chips. Sometimes when I'm tired or lazy, I'll grab a bag of tortilla chips and some salsa and - instant dinner!

So imagine how thrilled I was to discover fermented salsa that is actually even WAY better for you than regular salsa. (Remember, Dr. Oz says that a whole country should be named after tomatoes because they are so healthy; cooked ones even more so than raw.)

Now, I've always eaten salsa that is Tex-Mex in nature - salty, cilantro, jalapenos, the works.

So I was somewhat leery of this "peach salsa" recipe, but I had an abundance of ripe, fresh peaches off my beautiful peach trees. When I saw it had chipotle in it, I was okay.  OMG!!! This stuff is as good fresh as it is fermented! TRY IT.

Spot Cleaning

When I worked full time, my house was usually clean. Just about all I did at home was bathe, sleep, and get ready to go to work again. But now that I'm actually in my house all the time, keeping it clean is a big deal.

I'm retired, and I don't want to clean house any more; I want to do all those things I dreamed about doing when I had to go to work every day. The catch 22? I can't stand it when my house is dirty. It bugs me. A lot.

If you've seen my pictures on Facebook, you know I've been on a new tangent - fermenting food.

Most people are shocked when the topic of fermented foods is broached - probably because it conjures up images of those nasty-looking moldy blobs of stuff you find in a long-forgotten container in the back of your fridge every now and then. But let me put this in the proper perspective.
