Kefir Sour Cream


If you use one of your jars of kefir to make whey that you can use to culture other foods, you will have kefir cheese left after the whey drains off. Don't throw it in the compost pile!!! Instead, make kefir sour cream. Here's how:

Ingredients
1 batch kefir cheese
half & half or whole cream
sea salt

Directions
Put the kefir cheese in a bowl, and add salt to taste. It really depends on how tart or mild you make your kefir (based on how long you let it culture). Taste it and keep adding salt until it is as mild as you want it for your palette.

Stir in 1 tablespoon of half & half/cream at a time, until you have the consistency that you want for your sour cream.
