Ingredients
• 1 tbsp olive oil
• 1 tbsp lemon juice
• 2 large peaches, halved
• 1/4 tsp cinnamon
• 1 pinch ground black pepper
Directions
1. Whisk together oil and lemon juice and brush over peaches. Season with cinnamon and pepper. Grill for 3 minutes, turn, then grill 3 minutes more.
2. Remove from heat and let cool. Slice thinly.
NOTE: I sliced my peaches, poured oil/juice/seasonings over them, and cooked in a pan in my Nuwave oven on 4" rack on High for 10 minutes, stirred, then cooked 10 minutes more. Removed from juice with slotted spoon to add to Peach Crisp recipe.
PEACH CRISP

Ingredients
• 2 grilled peaches, sliced
• 1/4 C blueberries (optional)
• 1 1/2 tbsp sugar
• 1 1/2 tbsp lemon juice (fresh is best)
• 1 tsp cornstarch
• 1/2 tsp freshly grated lemon zest
• 1/8 tsp salt
• 1/8 tsp ground cinnamon
• 1/4 C cinnamon graham cracker crumbs
• 2 tbsp old fashioned rolled oats
• 1 tbsp butter, softened (NOT margarine)
• 2 tsp chopped nuts (walnuts or pecans)
Directions
1. Preheat oven to 350°F.
2. Mix grilled peach slices, blueberries, sugar, lemon juice, cornstarch, lemon zest, salt, and cinnamon in medium bowl. Let stand 10 minutes.
Combine graham cracker crumbs, oats, butter and nuts in small bowl and stir until mixture comes together (I use my hands - a lot faster).
Coat 2 (6 oz) ramekins or a 12 oz dish with cooking spray. Put peach mixture in dish. Top with graham cracker mixture. Bake 15 to 20 minutes or until topping is golden brown.
NOTE: I cooked mine for 5 minutes on 4" rack on High in my Nuwave oven.
