Fermented Lemons

If you want to create a food that is so different you can't explain it by comparing it to any other food you've ever tasted, try fermented lemons. I was very skeptical about this recipe, because lemons are just so sour - if you don't pair them with sugar, you can't take it. Well - now you can have your lemons without sugar - and love them.

The only draw-back is that you have to wait 30 days - a whole month - for them to be ready! But take my word for it, they are worth the wait. If you want to try your hand at fermenting food, this is the easiest recipe ever!

There are all sorts of recipes for fermented lemons on the internet, but I love the simplicity of this one:

Ingredients:
Organic Lemons (or dip in boiling water 30 seconds & put in ice water to remove wax)
Sea Salt
1 T Whole Allspice

Roll lemons around in boiling water for 30 seconds, then put in ice water to cool. Slice lemons and roll each slice in sea salt to coat. Place in jar and add allspice. Cover with purified water (not distilled and not chlorinated), and weight lemons to keep submerged. Cap tightly. Ferment 1 month.
